a recipe

The other day at the store, my daughter said: "Can I make cookie dough, I mean cookies?" Being a sucker for both, I said yes. My mom got this recipe from Sunset Magazine in the early 60s. I've had to decrease the butter (they tended to spread out and fry) and eliminate the words "or Margarine"!!

Chocolate Chip Oatmeal Cookies

3/4 pound butter

1 cup white sugar

1 cup packed brown sugar (7 oz, it is easier)

-- cream these together --

2 eggs

1/2 tsp salt

1 tsp baking soda

2 tsp vanilla

-- mix these together --

2 cups flour

1 1/2 cups oatmeal

-- add, 1 cup at a time --

semi-sweet chocolate chips to taste-- add, probably by hand at this point

drop on ungreased cookie sheet, bake 350 degrees about 10-12 minutes

I add 12 oz of chocolate chips because I like them that way -- some cookies are more chocolate than anything else! My daughter, who is obviously adopted, adds them to the tune of 1 chip per cookie. My husband prefers 0 per cookie. Go figure. (More chocolate for me!) These are really chewy, and it is OK to undercook them a little.

My Korean girl just made these. She said the dough was good too. But most it it got made into cookies. We made 4 cookies for my husband before adding the chocolate chips. Then he actually wanted chips, so I put a single chip on the top of each cookie.

Actually, all our exchange students have liked this recipe. Especially the German Kid, but he was a 16 year old boy who grew 6 inches while he was here. So that is hardly a measure, although he did take the recipe home.

The recipe I always used had 1/2 pound of butter, 1 1/2 cups of flour, and 2 cups of oatmeal. Plus now I substitute 2 tablespoons of ground flax mixed with 6 tablespoons of water for the eggs.
